I found Lumenor SMP and it runs 24 7 with a custom vanilla style world. It is on 1.21.11 and it also lets newer clients join with support for 1.21.4 and up.
It works for Java and Bedrock and even cracked players can join. The big idea is the role system where you can pick Passive if you want peace or pick PvP if you want chaos so different players can still play together.
The world has custom biomes and huge structures like ancient temples. There are rewards to find and it feels like it wants you to keep exploring.
There is player driven trading that is more like villager style trades and not a normal money shop. There are also PvP and Passive arenas where keep inventory is on only in the arena so you can practice without losing stuff.
It has custom armor trims that give small buffs and the Nether is made to be really challenging. They also say there is strong anti cheat to keep things fair. The server is hosted in Germany and the staff is from a bunch of countries so it feels pretty welcoming.
