Atropolis is a newly opened Java survival server that is going for a 16+ semi vanilla community feel. It keeps the game mostly normal but adds some quality of life stuff to make day to day survival smoother.
Some changes include phantoms being off and a one person sleep setup plus a PvP toggle. There are also protections and rollbacks for when things go bad and keep inventory is on in the nether and the end.
It runs extras like Simple Voice Chat and Dynmap and also has things like death count and head drops. Voice chat and Elytra Trims are optional so you can still play without them.
The nether is accessible at spawn and nether roof travel is allowed. The end is planned as a community event and it stays closed until March 28 so everyone can open it together.

I found a semi vanilla SMP that has been running for months and it resets yearly so the world stays fresh.
It is inspired by Hermitcraft so the vibe is chill and they do not allow griefing or killing. People are meant to build and trade and just play together.
There is an optional custom texture pack with cosmetic items like shop permits plus hats and weapons that do not change gameplay. They also use Hermit style datapacks like single player sleep player heads and armor statues.
Teleporting is kept simple since only /spawn is allowed in the overworld so players end up making roads and highways. Chat is linked with Discord for easier talking and CoreProtect is there to help protect builds.

Konohaven SMP is a Java semi vanilla server and Season 5 just started. The big change is that players get way more control this time. Stuff like spawn plans shopping areas and big travel routes are meant to be decided by the community. If you care about how things run you can start a group or work solo and actually shape the world.
The server is on Hard difficulty and it has single player sleep. There is also a live map so you can see what is going on.
For world stuff there is no set world border. Chunks generate out to 1500 at the start to help with early lag then you can explore as much as you want. The seed will be public. World generation is being tweaked to add new features but it is still aimed at keeping the vanilla feel.
Blaze and Caves Advancements are on with reduced chat spam. Simple Voice Chat is optional and you do not need mods to join. There is also an optional Origins datapack and they are still adjusting the values before players pick.

Cozy Craving is a newer survival server that started in February 2024. It tries to stay really close to vanilla Minecraft but it adds a few small quality of life things to make playing smoother.
The world is huge at 14k by 14k and it will keep getting bigger as updates come out and more players join. The map is meant to be long term and it will not reset so people can keep their builds and farms forever.
People here like building a lot. You can find big projects like towns skyscrapers large farms and a nether roof travel hub. There are also active players around who will help you get started.
It is unwhitelisted and the rules are strict about no griefing looting hacking or exploiting. Staff can track changes and roll back damage if something bad happens. The staff team is active and spread across time zones.
Gameplay is hard difficulty and there is no keep inventory. Teleports are limited to spawn tpa which may be removed later and home. Donations are not pay to win and are only for cosmetics.

I found LanderYT SMP and it is a semi vanilla survival server with a world that is about 7 months old. The server resets yearly so it stays fresh but still feels like a real long term place.
It is inspired by Hermitcraft so griefing and killing are not tolerated. People are expected to play nice and build up the world together.

This is a new SMP that started not long ago and it has a cool idea. You can either join the normal pvp side or you can declare yourself peaceful. Peaceful players cannot be griefed or stolen from and they are not part of the pvp scene.
The server runs in hard mode and has a world border from minus 4k to plus 4k. It uses custom terrain generation with tectonic and terralith and all the chunks are already preloaded so exploring feels smooth.
There are a bunch of quality of life tweaks. Only one player needs to sleep to skip the night. Minecarts go super fast at 90 meters per second and use the new experimental physics. You can sit on stairs. Enderman and ghast griefing is turned off and phantoms are disabled.
You can silk touch spawners and also silk touch amethyst buds. Ender pearls are disabled so movement feels different. The server uses purpur software to run everything.
If you like survival with some custom changes and the option to stay peaceful this server feels like a good mix of calm and danger.
