Infinity Isles is a Java SMP that stays mostly vanilla and feels trust based. It is meant for mature players who are 18+ and respectful. A lot of the community is LGBTQ+ and they really push a welcoming vibe.
It has some nice quality of life stuff like proximity chat GSit rapid leaf decay and no mob griefing. They take donations for server upkeep but they say nothing is pay to win.
There is a diamond economy and a HermitCraft like shopping district. There are also resource worlds players can use and those get reset about once a month.
They run weekly events like Survival Games Spleef and build battles. There is also a game district where players can make their own mini games and casinos. Staff are around a lot to help keep things non toxic and chill.

The Garden is a semi vanilla survival multiplayer server that keeps the vanilla feel but adds extra features to make it more fun. It supports cross play for Java and Bedrock Edition though Java is suggested for the best time.
The community is meant to be close knit and friendly and they shut down toxicity and drama fast. Players are pushed to make big community projects like towns and shopping areas and the server also runs events with prizes. They also support the Simple Voice Chat mod.
Rules are clear here with no hacking griefing stealing or nonconsensual PvP. The server is not pay to win and store items are still obtainable through gameplay. Ranks are earned with in game money and you can make money through jobs milestones and tasks or by running your own shop.

GOOMB SMP is a vanilla survival server with amplified terrain and it is in Season 2. The world was reset about a month ago so it still feels pretty fresh. People have been joining and building bases all over and the border has been expanded so there is more room to spread out.
The End is open and players have been doing an egg hunt event where everyone gets a chance to interact with the egg and other players. The community seems really active with shops being advertised screenshots of the terrain and lots of talking for deals and trade. Voice chats are often full too.
