AeternalCiv is a geopolitical civilization building server where players write the story. You can be a citizen or a king or queen or just a hermit doing your own thing. It is made for people who want to forge their own destiny.
It has protection and intel style gameplay with reinforcement from Citadel and Snitchmod so towns and nations can actually matter. It also mixes in Slimefun and Origins plus Brewery and ValhallaMMO.
The world has seasons and levelled mobs and more RPG style mechanics. There are custom recipes too and the server is still in active development so expect new changes and mechanics over time.

The Garden SMP is a Java 1.21.11 survival server that mixes towny roleplay with worldbuilding and adventure. It is open to join and it feels new player friendly.
Players make towns and nations in the overworld and then go on bigger adventures in other dimensions. A lot of the fun comes from building stories together and doing roleplay while you expand your place.
You can protect your builds with Towny and run chest shops to sell stuff without a forced economy. There is also a Devotions system where you can be a priest or cultist or a devoted worshipper and get rewarded for your piety. I found a modded survival server called BeagleSMP and it is built around fantasy lore with nations and conflict. The land is full of dragons and other beasts so you can go exploring and get into trouble fast.

The world is split between Noble Houses. Each house rules land sets taxes for its citizens and still answers to the Crown since the Crown owns all land in the end. Nobles can expand territory run settlements and try to grow their influence.
Players choose which house they live under but you can push for more. If you build loyalty and reputation and show ambition you can rise through the hierarchy and gain real influence. It feels like medieval politics where power keeps shifting.
