I found a survival server that is all about world building and stories. It uses a server side mod that changes world generation so the map turns into seven continents.
Each season everyone focuses builds on one continent. You can still travel and explore the other continents too. The main idea is to make the world feel alive with player made stories.
Season 2 adds more server side QoL mods. They also run fun events like a Christmas themed build off and a Geoguessr style event using their own world. Next week they plan to open the End for the first time this season. The community feels close and you can make friends or even rivals.

Calvaria is a Minecraft Java SMP that keeps things mostly vanilla and focused on hanging out and building with other players.
It is whitelisted so you have to submit an application to get in. The vibe is meant to be friendly so it is not just a random open server.
The server runs on version 1.21.11. It uses server side mods like Simple Voice Chat and an audio player plus stuff like vein miner and tree harvester. There are also some QoL crafting recipe changes item swapping mob and player heads armor posing and more. You do not have to install anything to play but you will need mods if you want to use certain features.

This is an adult based survival server called Campbell SMP that is now in season 2. It feels like a long term world where people actually stick around and play together. You do not have to grind all day to stay here so it is nice if you just want to relax after school or work.
The server is semi vanilla but it has a bunch of server side upgrades. The world generation uses different plugins so the terrain looks really cool. There are changes to the nether and end and even the desert jungle temples and ocean monuments feel upgraded. The wither and ender dragon are tougher so bosses are not a joke.
There is a progression based armor and tool system. You cannot just jump into iron and diamond gear right away. You need to level skills first and then you unlock better materials. The owners explain the system more in their discord.
The community runs a lot of regular events and players vote on how things should be done. It is a player run style server instead of one person controlling everything. There is proximity voice chat so people can actually talk when they are close to each other in game.
