I found a Minecraft server that stays really close to the normal game. It is vanilla survival with a friendly community and simple rules.
They say the core gameplay is fully vanilla and there are only a few small extras that do not change any mechanics.
There are no land claims or protections so it feels like true vanilla. But there are active mods and a ticket system so if someone griefs your stuff they can restore it.
It runs on version 1.21.11.
