I found a big modded Minecraft server built around That Time I Got Reincarnated as a Slime. The goal is to recreate the Tensura world with a magitech vibe like Tempest. You start in the Capital City of Tempest and it was built by the community. There are Tensura characters walking around as NPCs and the screenshot shows stuff like Rimuru and Luminous and Testarossa and Ultima and Carrera as custom entities.
It runs on 1.19.2 and it is huge with 300 plus mods. There are over 2000 quests and a crazy amount of skills with their own quests to unlock them. You can pick from over 50 races and there are 500 plus evolutions plus custom dimensions. It also works like a standalone RPG even if you do not know the anime.
The main questlines are fully covered for Vanilla Minecraft and Minecolonies and Ice and Fire and Apotheosis and Create. The quests explain a lot so you do not have to alt tab all the time. There is a full economy system with shops and currency converting and skill mastering. There is also an Adventurers Guild where you start at F rank and work up to SS class by fighting monsters and stronger stuff.

I found a modded Minecraft server running 1.20.1 that is built around fantasy progression and RPG stuff like races classes and leveling.
It is hosted on dedicated hardware in Europe Belarus and it also uses a proxy through Germany to help players from far away get better ping. The server says it holds around 20 tps on average.
The pack has RP Enhanced plus Lootr and Voice Chat. Teleports are restricted so you travel more using spells waystones and elytras. You start with free waystones and you can get free bandage kits every 12 hours.
There is fantasy worldgen with biomes and you can run into orcs goblins and dragons. It also has Minecolonies with the Byzantine Styles Pack and Immersive Quests. It says no pay2win and it stays up as long as there is at least one active player with modpack rotation when it goes inactive.

Lucidia SMP is a modded survival server that is about starting over in a new land while a strange fog called The Shroud spreads through the world. Players are treated like new colonists who get welcomed into the Kingdom of Lucidia and then they pick where to settle.
You can choose between a sunny tropical island called Dawncrest or a lush mysterious island called Duskmere. The whole point is to work together build up the new home and make your own stories as you explore and survive.
The modpack leans hard into RPG style play with race and class mods inspired by DnD. It also has farming and crafting style mods like vinery bakery herbal brews and more. There is medieval armor a thirst bar and a system where you go down instead of dying right away plus mythic mounts and other quality of life mods.
You have to be 21 or older to join and you need a microphone because in game voice chat is required. There is also a stress test running for a few days so people can try the full modpack before the official opening in one week.

Overgrowth MC is a semi vanilla SMP that feels like an RPG. There are tons of new items and custom mobs to find. You can get stronger with custom weapons and armor and then take on dangerous creatures and dungeon bosses.
If you want a calmer life you can focus on building and live in peace with Towny protection. If you want fights there is PvP with duels and also wars and more.
It also has skills like tree feller and fast mining. You can pick classes and races and learn magic and spells. There is a brewery chest shops roleplay crossplay and custom textures.
You can join on Java and Bedrock. Versions are 1.21.7 to 1.21.11 plus recent Bedrock updates.

Delve is an 18+ text based modded MCRP server on Java Edition. The world is getting wrecked by strange dungeons that keep forming and spreading. You play as someone who watched their homeland start to rot and now you have to figure out why it is happening.
The setting is year 1710 and the vibe is dark and serious. People are leaving ruined regions to search for a safer place. It feels like everyone is pushed together by the same disaster and the story is about learning what is really going on.
There are 9 official races with their own history and culture like Man Elves Fae Were folk Dryads Gulls Gnomes Unmarked. The server uses no classes and instead has a big skill tree with 183 skills so characters can feel really different.
The official server is not open yet but the community just launched and is aiming to release soon.

It has lots of dungeons monsters and magic. The pack includes mods like Create Ice and Fire Valoria Tinkers Construct and Iron Spells and Spell Books plus many more.
You get to pick from many races classes backgrounds and a magic alignment. You can also start a kingdom faction nation or rebellion and make your own story with other players.
FTB is included so you can team up claim chunks and help protect your stuff from thieves. The server is very new and still growing. The owner also plans to add public dungeons world exploring quests and custom NPC content for 1.20.1.

The Garden SMP is a Java 1.21.11 survival multiplayer server with lots of plugins that add extra flavor. It is built around worldbuilding adventure and roleplay so people can make stories and actually interact.
Players start with 3 lives and you only lose lives through PvP. If you lose all 3 you become a ghost and the afterlife becomes your thing. Other players can also bring someone back using a craftable revival book.
Some vanilla stuff is disabled to fit roleplay like Elytra and Ender chests. This pushes people to build roads and ports and other infrastructure instead of just skipping travel.
There are also features like chest locking with trial keys and lockpicks to break in. You can make chest shops brew alcohol and use a bunch of quality of life changes.
When you join you wake up in the clouds then descend the Monolith to begin. You can pick a race for your character like elf halfling merfolk giant or human then wake on the docks of Isla De Viva Eterna. From there you can sail to the mainlands and claim land or live in a town with others.
The vibe is meant to be relaxed with optional challenges. It says there is no pay to win and the staff and mods are active and attentive with a small community.

I found a modded Minecraft SMP called Gilded Abyss and it just started Season 2 a couple days ago. The whole season is going for a medieval era vibe and it feels like a story server.
When you join you end up getting sorted into one of two groups. As the server goes on both groups get daily tasks and it sounds like it will push people to team up and actually do stuff.
There are lots of biomes to explore since it uses Biomes o Plenty and Terralith. There are also special items you can get in certain ways and you can pick an origin race in game to match your playstyle.
They also have custom bosses for harder fights and the Create mod so people can build machines as long as it is reasonable. The End is locked for the first week and then it opens with an event.
It is whitelisted and you join through a ticket system where you talk to the owner or a moderator first. They want player suggestions and they say there will be lots of events.

The Garden SMP is a Java 1.21.11 survival multiplayer server that leans hard into worldbuilding adventure and roleplay. It is meant to feel relaxed but still give you optional challenges if you want them.
