I found a Java SMP that is adults only and it is in season 2 right now. It is still early to mid game so you are not super behind.
It is vanilla survival and it is meant to be long term with seasons. They keep the mods minimal and it is mostly just quality of life stuff.
The End is closed for now so people are not rushing everything. To join you do a short application then a quick Discord voice chat vibe check.

Ravencraft is a semi vanilla survival multiplayer server with a community that likes to build explore and experiment together. It is made for adults and it is 18 and over so the vibe feels more chill and mature.
The server runs on hard difficulty so survival can get rough fast. There is a sleep plugin so nights go faster when more players sleep and fire spread is turned on so you have to be careful.
The map started fresh on December 12th and the world border expands over time so there is always more to discover. There is also an overworld road network and a nether tunnel system that keeps growing.
