UneasyVanilla is a vanilla anarchy server that does not allow hacking or cheating. It has been running since March 10th 2020 and it is made for players who want total freedom but still want the game to feel like normal Minecraft.
There are no gameplay changing plugins and no easy commands. You do not get teleport commands or sethome so you have to travel the world on foot or with whatever you can get. There is no grief protection and no preset economy so players create their own rules and values.
Griefing and raiding are allowed so your builds are never totally safe. This makes every base and every journey feel risky. You can make alliances or just stay alone and hide. Big building projects are possible but you always have to watch your back.
The server runs on version 1.21.8 so it is up to date. If you want survival where everything is player controlled and surprise fights and encounters can happen at any time this server fits that style.

EmberSteal SMP is a multiplayer world that mixes ideas from lifesteal and other power based servers into one place. It is all about fighting and stealing and keeping your progress safe.
When you kill another player you have an equal chance to steal one of their hearts or one of their effect bundles. There is also a third special mechanic that is planned but not shown yet. Everything drops as embers so your gains are never fully safe.
You can craft effect bundles yourself and stack them. If you eat the same bundle again it upgrades from level 1 to 2 and from 2 to 3. All of this is done with custom datapack effects so it feels fresh.
The goal is to make progression feel fast and dynamic but still balanced because other players can steal what you worked for. It is planned for Java and maybe Bedrock and they use simple voice chat so fights and team ups feel more real.
The server is still being worked on and they want people who are down to join or help test it once it is ready probably around mid December.

I found this server called Anarchy Network and it is a semi anarchy world that tries to feel like pure vanilla survival. It launched in October 2024 and it is hosted in New York City so it feels pretty stable and it is on all the time.
You can join with a ton of Java versions from 1.7.2 up to 1.21.10 and they recommend you use 1.21.10 so stuff works right. The world border is huge with two million blocks so you can run super far and hide if you want.

Everbloom SMP is a survival network that feels like two different adventures in one place. There is a survival season that starts on December 13 and there is also a casual SMP world.
In the survival season you can farm a lot and make full redstone builds and even use the nether roof. PvP and raiding are turned on so you always have to watch your back. The world border is 75k so there is tons of space. People use diamond gear only and maces are not allowed so fights feel more classic.
The Everbloom casual SMP is for players who just want to chill and build. It has custom terrain and custom structures but it still feels close to vanilla Minecraft. Iperios is a survival server where players make their own nations and fight for power. You build your country and decide your own government laws and ranks. If you do not want to lead a nation you can just join one that already exists and help it grow.
The main idea is geopolitics. There are special resource camps in the world that nations can conquer. When your nation controls these places you get resources for your expansion. You use this to get stronger and to claim more territory. There are many different resources and buildings you can make and the staff explains everything in their channels and with support.
The server uses McMMO so you can level your skills and become stronger in fights. There are custom enchants to make your gear more powerful. Dynmap lets you see the world map. GriefPrevention is there so players can protect their land. SilkSpawner lets you pick up and move spawners.
