It feels like enhanced vanilla and it is meant to be brutal. You have to be smart to survive and get ahead.
Season 2 is out with a fresh start and new additions. They are also opening a new place called the Wasteland Dimension with its own gear to fight for big mega structures with secrets and a unique currency for a player driven economy. I found Goober SMP and it is a brand new Vanilla plus Java server. It started just a few days ago and it already has around 20 active players so it feels alive.
The server is mostly vanilla but it adds small stuff to make multiplayer more fun. PvP is allowed and people are into building and hanging out so you can fight or make cool projects.
It runs on Java 1.21.11 and it has whitelist on so you need to get added before you can play. It also supports SVC mods and has a head drop plugin so players can drop their heads.

I found MoshPit SMP and it feels like survival with a vanilla vibe but with more action. It is made to be fun without turning into a total mess and the owner is still working on it and changing things based on what players want.
There are no land claims so you can build anywhere and raid anywhere. It supports both Java and Bedrock players so friends can join even if they are on different editions.
The server has an economy with player shops and an auction house. There are duels too if you want to try to make quick cash. It also has custom enchants that are meant to stay balanced like 3×3 drills and lifesteal.
The terrain is custom but it still looks like it belongs in normal Minecraft. PvE gets harder the farther out you go and there are random world events every 30 minutes that can help or hurt or just be weird.
