I found MoshPit SMP and it feels like survival with a vanilla vibe but with more action. It is made to be fun without turning into a total mess and the owner is still working on it and changing things based on what players want.
There are no land claims so you can build anywhere and raid anywhere. It supports both Java and Bedrock players so friends can join even if they are on different editions.
The server has an economy with player shops and an auction house. There are duels too if you want to try to make quick cash. It also has custom enchants that are meant to stay balanced like 3×3 drills and lifesteal.
The terrain is custom but it still looks like it belongs in normal Minecraft. PvE gets harder the farther out you go and there are random world events every 30 minutes that can help or hurt or just be weird. It was tested on low end PCs so it should run fine for most people.
