I found a lifesteal style SMP that is trying really hard to not die in two weeks. It is built around PvP but it is not just farming hearts and stomping new players forever. The owner says they wrote a huge custom plugin from scratch to keep fights interesting and give people more to do.
The combat is way different from normal. It has directional knockback and momentum hits plus air juggles and ground pounds. There are 5 unlockable combat abilities called Berserker Phantom Titan Phoenix and Paladin and they change how you fight.
There are 28 custom enchantments and also 4 hidden combos that are not explained in game so you have to figure them out. The overworld has a Wilds system where it gets more dangerous the farther you go from spawn with 5 threat levels. There are custom mobs with real AI and 8 biome mini bosses plus procedural ruins outposts and strongholds with loot.
There is also a giant Colossus boss you can summon at stronghold altars. It has 8000 HP and 3 phases and it is meant for at least 3 players to get loot. The server runs on Paper 1.21 and it supports Java and Bedrock crossplay.

This server is called Experimental Hardcore and it is a hardcore anarchy world with weird events that keep changing how you play. The world gets random constraints and different experiments over time so the game does not stay the same.
At the start the world border was super small and every day it grows bigger. When someone went to the End a destruction timer started and after that nobody could go to the End anymore. More events like that keep happening and they can limit or unlock new stuff you can do.
The server is hardcore so if you die you are done and death is forever. But there is a way to be revived if other players help you. When you die you become a ghost stuck near your own player head. You float there in a special spectator mode and cannot go through the ground. If someone finds a special revival location and has your head and enough resources they can bring you back to life.
As the border gets bigger you can find old builds and strange structures from past players. Inside there can be loot danger and small bits of story. The way you mess with these places or items can change things for you or the whole world.
The server is anarchy but with rules against hacking and exploits. Griefing killing and stealing are allowed. Crystal pvp and anchor pvp are turned off. Java Minecraft version 1 is used.
