I found Banana Sandwich SMP and it is on Season 3 and it feels like a stable survival world now. They said they are about 1.5 months into the season so the early scramble is over and there is already good infrastructure.

The vibe is 18+ and more mature and chill and collaborative. They also use Bluemap so you can see the world change as people build.
They have some fun extras like invisible item frames custom armor stands and you can sit or ride too. It is zero pay to win and they said the dragon will drop elytra so it stays fair for everyone after the end opens in two weeks.
