I found a Minecraft Java server that is online all day and night. It runs on version 1.21.11.
It is mainly survival with PvP and a community vibe. They also do events and there is staff around.
It has ViaVersion and ViaBackwards so people can join from multiple game versions. Gameplay is meant to feel smooth.

StarFrost is a new SMP where the whole point is conflict betrayal PvP and loss. If you hate dying or losing items then this is not for you.
Everything is meant to be fair since the world is brand new and nobody is months ahead. There is no pay to win and there is no special protection to save you.
You cannot be offline griefed so if you are not online your base cannot get destroyed. But if you are online and someone raids you then it is real and it means they planned better or fought better.
The server is capped at 35 players and they want something long term. Whitelist is required and they do not want people who quit after one bad fight.
Supports 1.16 to 1.21.11 and it works for Java and Bedrock.

I found a new survival PvP server called RemakeSMP and it feels like one of those places where you join and instantly have to watch your back.
People run in teams and there are assassin groups too so it gets intense fast. The main vibe is fighting and trying to keep your stuff safe before someone takes it.
They also do tournaments every couple weeks and you can get really strong loot like the king's loot. There are basically no rules except you cannot cheat so it turns into full chaos but still fair.
