Realm of Thrones is a small crossplay SMP where players focus on building kingdoms and growing them over time.

I found GOOMB SMP and it is a vanilla survival server on amplified terrain. The world got reset about a month ago so it still feels like a newer season and people are building fresh bases.
At first the world border made players live closer together but the border expanded so now there is a lot more room to spread out. The End is open and players started an egg hunt event so you can meet people while doing something fun.
The community seems really active with players advertising shops and sharing terrain screenshots and talking about trades. Voice chats are often full of people just hanging out and planning stuff.
The rules are pretty serious about being respectful. No hate speech or NSFW. No griefing stealing or unconsented PvP. You have to apply first and then get whitelisted.

LuckyGem SMP is a fresh semi vanilla survival server where you can play on Java or Bedrock together. It feels like a new start with a fully custom spawn and lots of places meant for players to use like a shopping district and a nether hub.
The server runs weekly competitions so there is always something to do. The challenges can be stuff like building mining redstone and PvE. Winners get big prizes with rare items and server perks plus bragging rights.
There are custom features too like over 2000 custom advancements and cosmetic datapacks so your character and builds can look more unique. There are also staff collectibles you can gather and if you collect five you can move a spawner to your base.

Posalon is a geopolitics and worldbuilding server that has been running as an active project for almost two months. It has an active community and it supports crossplay between platforms.
The main idea is making your own nation and building it up. You can create towns and grow your story or you can join one of the nations that already exists.
Movecraft is the big plugin here and it lets players build vehicles out of blocks like ships planes tanks and submarines. That means fights can get huge with ship battles and air battles and it adds a whole new layer to warfare.
It also has Brewery X plus lands guns a stock market and shops. The server is not only about conquering though since it is focused on worldbuilding and making a shared history with the community. Players are from all over the world and it gets more active on Sundays and afternoons for EST PST and UTC.

Elysium is a small Java multi world server that just reopened with a fresh start in early November. It is looking for more players and it is mainly aimed at 18 plus. A few older community members are still around from the earlier server.
There are three main worlds. Survival is on 1.21.10 with a 10k by 10k border and mcMMO skills. It also has an online map you can open with the link from the map command. Teleport commands are mostly off so it feels more vanilla and people use Nether roof travel. There is a shopping district at spawn where players can set up chest shops and use diamonds.
Plots gives you 85 by 85 build plots so you can make your own space and not worry about other people. You start with one plot and can earn more by moving up build ranks.
Creative is a superflat freebuild world for bigger community builds. Team builds are encouraged but changing builds without permission is not allowed. There is also a Hub world for getting around plus a second Creative world that is a perk for higher build ranks.

I saw stuff like legendary fishing you can sell, crates, a server shop, player shops, jobs that pay you for playing, and McMMO leveling. They also just launched around 25 quests and it is new and still being tested with more planned later.

This server is a classic prison grind with that older school feel where you start with basic tools and leather gear and you work your way up.
You mine ores then you actually have to smelt them and move through pvp zones to sell at the commissary so it feels risky and slow in a good way.
There are Guards who help new players and also enforce contraband. Swords and potions are illegal so if a Guard sees you with them they will pvp you. You can even get sent to solitary for bad conduct.
Once you climb the ranks from A through H you can reach Parolee and then Citizen. Parolee lets you leave the prison and build a farm to earn more money. After top rank you can prestige for special rewards.
There are quests for extra cash or special items plus custom fishing. You can rent a cell or a plot to store stuff build and make your own shop. There are illegal special plants you can grow for profit if you do not get caught. There is also an auction house bounties and parkour challenges around the prison.

I found Summit Survival and it feels like the kind of Minecraft server that keeps things simple. It started back in 2020 and it has grown into a real community even after a lot of the original friends stopped playing.
It is a hard survival server with keep inventory turned off so deaths matter. There are no land claims so you play more naturally with your friends and the world. Trading is based on raw gold and there is a player run shopping district.
The server has a few quality of life commands like spawn and sethome and it also has night skip. Staff are mostly hands off and they step in for cheating or griefing.
The rules are serious about fair play. No hacking or x ray and no removing lava fog. You are not supposed to mess with other player builds or entities and you should keep a reasonable distance from other bases. Big duplication glitches are not allowed but some small single item dupes are ok. Hate speech and anything that pushes real world violence is not allowed.

Cubed Chaos is a survival SMP that has been around since b1.2 and it plans to keep updating as time goes on. It feels like a server trying to build a real group of friends who like Minecraft and want to add to one shared world.
The world is huge and there is a lot to explore since the world file is around 50 GB. The vibe takes notes from YouTube SMP style servers with a diamond economy and players making their own bases. You are also expected to help the market at spawn so the server feels alive.
There are lots of datapacks that add quality of life and extra crafting. Stuff like armor statues more mob heads player head drops coordinates hud fast leaf decay double shulker shells and dragon drops elytra are included. There are also crafting tweaks like turning items back into blocks extra recipes and more building options.
Rules are pretty simple and strict. No griefing and no stealing. No glitch exploiting like duping and no x ray. Some client side mods like minimaps are allowed.
