I found this server called Cozy MC and it feels really calm. They can have around 100 players online and it still does not feel crazy or loud. People actually help each other and it feels like a real shared world.
The world is just normal Minecraft survival. It is vanilla so there are no weird plugins changing the game and there are no plots or minigames. Everyone just builds near each other and shares roads and railways and other stuff.
The server is trust based so there are no land claims. You are supposed to read the rules carefully first. If something bad happens staff has tools to roll stuff back so that helps keep it safe.
Chat is pretty calm and people are respectful. PvP is only allowed if both players agree so it is not a constant fight server. You can join and start exploring right away.
To unlock full interaction like breaking blocks and picking up items you have to read all the rules. This is how they keep the world protected but it still feels like a real multiplayer server and not just singleplayer with chat.
If you want a peaceful multiplayer survival world that feels like it can last a long time this server is made for that.

UneasyVanilla is a super rough Minecraft server that feels like real survival with almost no rules except no hacking or cheating. There are no crazy plugins changing the game and you have to play the game the way the devs actually made it.
There is no teleport and no sethome so every trip and every base location really matters. You have to walk everywhere and explore for real. Griefing and raiding are allowed so you can lose your stuff if someone finds you.
There is no forced economy or protection so players make their own trades and their own rules. Some people build huge bases. Some people just roam around and raid. You never really know who you will run into in the wild.
The server has been running since March 10th 2020 so the world feels old and lived in. If you want a raw vanilla survival experience with anarchy style freedom but without hacks this server fits that really well.
