Kings Talk is a fantasy modded nations roleplay server where players can start their own nation or join one that already exists. You can make original roleplay characters and basically do what you want with the world.
The nations grow in an organic way and the modpack has RTS style units plus siege weapons and automation. It feels like you are building up a civilization then deciding if you want peace or full on war.
The map is 3k by 3k and the server stays running all the time. It is Java 1.20.1 and it is modded with organic RP nations and voice chat.

Anarchy Network is a semi anarchy survival server that tries to feel like real Vanilla Minecraft. It has very few changes so the game stays simple and tough.
The server is online all the time and it supports Java from 1.7.2 up to 1.21.11. It is recommended to play on 1.21.11 so you do not run into issues.
There are no map resets and the world border is set to 2 million blocks so you can go super far. There is no pay to win and there is no teleporting. PvP and griefing are allowed so you should expect danger.
The only non vanilla command is spawn so people far away can get back to civilization. Nether roof access is allowed. Phantoms are removed and only half the players are needed to skip the night.
They do not allow exploits lag machines duping spamming or harassment and racial slurs in chat.

The rules are very few but hacked clients and unfair mods are not allowed. Griefing near spawn is blocked within 1k and it gets handled by active moderation instead of claim plugins.
Simple Voice Chat is available across the server. There is also a creative world with no plots so it is easier to test big builds and ideas properly.

I found a small Minecraft server that is meant for people who want to stay on one world for a long time. The map has been up for about 4 months and the goal is not to become huge. It feels more like a place where you build and keep coming back.
It runs on version 1.21.11 and the world border is 1m by 1m. Player count is usually low like 0 to 9 online. It is hosted on dedicated hardware in Germany and the TPS is around 20 most of the time.

CinderCivs is a vanilla plus geopolitical roleplay server where players run the world and the story. It has been going for over two years and the main world does not reset so builds and changes stick around for a long time.
You can claim land in a 10k by 14k area that will persist. There is also a larger 20k by 20k map out to the world border that gets reset each major update so people can explore and mine again.

I found IronVail and it is a pure vanilla Minecraft server for people who want the real survival feel. There are no teleport commands and no home command. There are also no land claims so you have to pick a spot build it up and protect it yourself.
It is not meant to be an anarchy place. Cheating like flying or x ray is not allowed and they use automatic anti cheat to help stop it. Profanity is strongly discouraged.

This is a long term survival world where what happens actually matters. The map is persistent so builds can get conquered or lost and the history sticks around. It is not a minigame thing and it is not meant to wipe all the time.
The world uses custom made terrain with handcrafted regions and structures. Travel routes are intentional so exploring feels more like a real place and less like random chaos.
Healing is slower like UHC style. You have to plan for fights and trips and use downtime instead of just instantly healing forever.
There are custom relics getting added across the map with a tracking system to hunt them down. Some can be hidden underground or locked in bases or even carried by other players.
Enchanting is not easy and max gear is not expected. Fights are supposed to feel conclusive so skill and preparation matter more than just stacked items.
