UneasyVanilla is a vanilla Minecraft server with a semi anarchy survival style. It feels pretty relaxed but also kind of dangerous since players can mess with the world and you still have to survive.
The world is over 4 years old so it has a lot of history. Spawn is totally griefed and your first spawn drops you into a maze of lavacasts. If you can escape then you can go explore and build bases wherever you want.
The server tries to stay authentic to Minecraft and keep it feeling original. There are some simple rules mostly to keep things fair and to protect server performance. Staff are active and they ban cheaters so regular players can actually play.

I found a true vanilla anarchy server that has not been reset since 2019.
It feels like the whole world has history because old bases ruined builds and hidden stashes can still be out there.
Spawn is totally wrecked from years of players but if you travel out you can still find quiet land and forgotten stuff to discover.
There is no hand holding and anyone can build or destroy so it is just survival.
It is Java only and it stays updated to the latest version which is currently 26.1. It also runs on a custom built machine.

This server is a true hardcore survival world on version 1.21.11 and it starts you in a huge ocean so the first minutes feel rough. People say you should search for cracks in the ocean floor to find really old mineshafts and grab planks and cobwebs so you can make your first bed.
Death is harsh here but it is not always forever. If you die the community can vote to revive you in game and if nobody helps you then you come back after 24 hours.
It stays basically vanilla and they do not change the vanilla jar. They use a custom chat bot for some cosmetic commands and it adds a homes feature but you only get one home.
They track stuff every day like deaths achievements chat new player first logins lag and average player count and put it in a server newspaper.
There are only two rules which are be respectful and do not try to crash the server. The vibe is relaxed and unstructured and stealing and griefing are allowed so you have to protect your own stuff. Most players are 20 plus and there are people from the US Russia and Poland.

Straight Up is a vanilla survival server that is trying to be a forever world. The overworld has not been wiped since April 1st 2019 and they say they plan to keep it that way. It feels like a place where you can find old bases and see years of history.
It stays close to normal Minecraft with no tpa and no home commands. There is also no currency and no factions and no economy plugins that change the game.
PvP and griefing are allowed and there are no land claims or protected zones. You kind of have to play smart and be ready for danger.

I found 1fighter2defenders and it is a survival server that tries to stay as vanilla as possible.
There are no gameplay rules at all. No land claims and no protection so you can get griefed or you can grief back. Building cheating and everything else goes.
They also say there are no server sided dupes and there are no world resets. The server started in April 2021 so it has been around for over 4.5 years with lots of players showing up at least once.
It runs on 1.21 and you can join on versions 1.17 through 1.21.11.

I found AnarchyMC and it is a straight up anarchy server with no rules. There is no anti cheat so it is a rough place where anything can happen.
The map has not been reset and it is about 1.5 years old. Spawn is already pretty griefed and it has that lived in history feel.
If you want a long running world where you can do whatever you want then this server is basically that.
