HollowSMP Season 2 just started and it feels like a fresh new world to grind on. It is Survival plus so it keeps the vanilla survival style but adds some quality of life stuff that makes everything smoother.
The server is on Java 1.21.10 and it also supports Bedrock players so your friends on other platforms can join too. There is built in proximity voice chat so people can talk when they get close in game which makes exploring and teaming way more fun.
Spawn is protected and it has healing and feeding so you can chill while you get started. There are anti grief and anti cheat systems and also moderation tools and leaderboards so it feels pretty safe and organized.
Right now the End has not been touched and they are planning an Ender Dragon event on January 3rd at 9 AM CST. They said more community events will happen after that so it seems like they want players to actually play together.
There is no pay to win and the staff seems active and the community feels chill. If you want a new world to start in and gear up before the End opens this server looks like a good place.

This server is called MistyMC and it is seriously pure vanilla. There are no teleport commands and no pay to win stuff so everyone has to actually play the game. You mine and build everything yourself and it really feels like classic Minecraft.
The world is long term and they do not reset it all the time. So if you grind for two months your progress will still be there. It is a real grind but that is kind of the point and it feels worth it when you finally get good gear and cool bases.
They let both Java and Bedrock players join which is nice because you can play with more friends. The community feels pretty inclusive and people seem to play fair and respect each other. Astral Swords is a Java Minecraft server that runs version 1.21.10 and it feels like regular survival with a cool twist.

This server is called LegacyMC and it is a pure vanilla anarchy world. There are no rules and no land claims so anything you build can be found and destroyed. I found this server called Anarchy Network and it is a semi anarchy survival world that tries to feel really close to vanilla. It launched in October 2024 and it runs all the time.
You can join with Java versions from 1.7.2 up to 1.21.10 and they say 1.21.10 is best so stuff does not bug out. The world border is huge and goes out to two million blocks so there is a ton of space to run and hide.
The playstyle is very loose. There are no map resets and no teleport commands so if you go far you really travel. There is no pay to win at all and griefing and PvP are fully allowed so you have to be careful who you trust. The only non vanilla thing you can use is a spawn command so people far away do not feel trapped.
They also allow using the nether roof and they removed phantoms so nights are a little less annoying and only half the people in the server have to sleep to skip the night.
Even though it is semi anarchy there are still some rules. You cannot use exploits or dupes. You cannot build lag machines or spam chat. Harassment and racial slurs are not allowed either.
Overall it feels like a pure survival server with almost no limits where the world never resets and your actions actually stay forever.

This server is called Kronos SMP and it is a huge Earth map with a 1 to 500 scale. The whole idea is that everyone starts fresh on an empty world with no old nations or broken land.
You pick a real place on the Earth map and try to claim it and hold it. Other players can try to take it from you so it is all about defending or invading.
