I found this server called Anarchy Network and it is a semi anarchy Minecraft world that feels really close to vanilla survival. It launched on October 11th 2024 and it is always online so you can hop on any time.
You can join on Java from version 1.7.2 all the way up to 1.21.10. They say it is best if you use 1.21.10 so stuff does not break. The world border is huge at two million blocks so there is a ton of room to explore and hide.
The rules are super light. Griefing and PvP are totally allowed and there are no map resets and no teleport commands and no pay to win at all. The only command you get that is not vanilla is spawn so you can get back to civilization if you go super far. You can also use the nether roof and phantoms are removed and only about half the players need to sleep to skip the night.
There are a few things that are not allowed. You cannot use exploits or lag machines or duping. You also cannot spam chat or use harassment or racial slurs. So the world is harsh but the basic behavior rules still exist.
If you like pure survival with chaos and big journeys and almost no rules this server fits that style a lot.

This is a hardcore SMP server that is all about real survival with other players. It works on both Java Edition and Bedrock Edition so more people can join and play together. When you die it actually matters so every move feels risky.
The server has a coin economy that is completely run by players. You do not buy or sell normal items to server shops. You trade with other players and use an auction house. Coins come from killing mobs and looting chests so you earn money by actually playing.
There is a strong land claiming system so you can protect your base and farms from griefing. Your claims keep your stuff safe while you are offline. But when you die your claims get deleted so your land becomes unprotected. This makes staying alive super important.

Ironbark SMP is a hardcore style survival server where every death really matters. It is semi vanilla so the game still feels like normal Minecraft but with some smart changes that make it more intense.
The main thing is the custom deathban system. When you die you get banned for 1 hour and it doubles every time you die again. There is a monthly global reset and if you manage to survive 48 hours the last increase gets cut in half. So staying alive is super important and planning ahead actually matters.
There is mcMMO and some reworks to food and survival. Mushroom stew heals 3 hearts. Cake gives extra absorption hearts for a while plus resistance and has a cooldown. Totems are disabled so you cannot just cheat death with a totem. This makes fights and exploration feel way more scary and fun.
Ranks are based only on playtime and they do not give gameplay advantages. They are just for looks and status so it stays fair. The whole idea of the server is smart survival cooperation and real risk. It is looking for more mature players who like challenge and a strong community.

Cozyvale is a new 18 plus Minecraft server that is trying to stay really close to vanilla but still feel nice to play.
From what I saw the world is survival and the owners are just a group of friends. They added a few small quality of life things like only 40 percent of players need to sleep. Leaves decay faster so you are not just staring at trees. There is a simple voice mod and a dynmap so you can see the world.
They also have stuff like re dyeable dyed blocks and player and mob head drops. You can use cauldrons to make concrete and mob grief is reduced so your builds are a bit safer.

ShovelCraft is a semi vanilla SMP that is all about building and long stories instead of rushing to the end.
The server world is split into two main zones. In the Green Zone you cannot do pvp or steal or grief. There are no generated structures there and it is all about building towns trading and making lore together. In the Red Zone pvp is on and stealing is allowed and normal structures can generate so it feels more dangerous but you still are not supposed to just grief everything.
The End is turned off so there are no elytras or shulker farms. People travel by land or on water or through the Nether so the world feels bigger and slower. The world is meant to last a long time with no planned resets so your builds and stories can stay.
There is a diamond based economy and a team system. Teams can level up by using diamonds and that unlocks extra perks like more warps shared storage and more member slots. There are also seasonal competitions that give lore themed rewards like armor trims and shulker boxes.
