This server is called MineRealm and it is one of the longest running SMP servers I have seen. It has been online since 2010 and more than two hundred thousand players have joined over the years. The world is smaller at first and slowly expands so new land always uses the latest Minecraft version.
The gameplay is focused on survival and is fully legit. There is no pay to win and no item spawning. Everything you see was gathered and built by players. There are no fancy spawned in hubs or prefab structures so the whole world feels really player made.

I found this server called KiaTEC and it is a semi vanilla survival world that is still pretty new. The world is only a few weeks old so it does not feel all used up. It is for people who just want to build explore and hang out without drama.

United Lands is a Towny Earth SMP where players build nations on a 1 to 500 scale map of the real world. It feels like a mix of survival building and politics where people fight wars or make alliances and shape big empires.
There are seven different jobs you can level up and they have skill trees so you can progress in your own way. This server is running a big elytra race called The Great Honey Glider Race. The whole thing is about flying skill and speed and not about pay to win.
