MineRealm is a really old survival server that has been running since 2010 and a ton of players have joined it over the years. When I joined it felt like a classic SMP world that just kept going instead of resetting all the time.
The world is smaller and it slowly expands so new land generates in the newest version. Builds are protected with their own protection system and with CoreProtect so griefing is not really a thing here. Your stuff is meant to stay safe and not just vanish in a reset.
The server stays very close to vanilla but there are some custom plugins that add a few unique features and help the community play together better. Almost everything you see is built by players and not some giant prefab hub that was spawned in.
There is no pay to win and no spawned items so all progress is done by actually playing survival. The server has a lot of public infrastructure that players made over time so it is easy to get started and then work on your own long term projects.

CrabCraft is a simple vanilla style SMP that tries to keep Minecraft fair and fun. It is inspired by HermitCraft so the whole idea is to play survival with other people without a bunch of crazy plugins changing the game.
The server uses light quality of life stuff that makes things smoother but does not change how the game is meant to be played. There are no ranks and no paid perks at all so everyone is on the same level. They also use proximity voice chat so you can talk to people who are near you in game.
The community is active and respectful and they seem to care a lot about that. Last season over 150 players joined and together they played more than seven thousand hours. The server does automatic backups and has per chunk rollback so if something really bad happens they can fix it.

EchelonMC is a custom survival SMP that feels different from most servers I see. The owners use their own code and not a copy paste plugin pack so everything fits together really well.
The server is survival but it has extra systems that are made to help long term play. As you walk around you can make paths and get speed when you use them. There is a currency you earn just by playing and you spend it on progression and useful stuff.
Land claiming is a big focus. Claims have visual borders and per chunk settings and a bunch of anti grief tools. You can control mobs TNT fire spread raids and even fluids so builds stay safe.
There are public chunks where you can publish your builds for other players to visit. You can earn from visitors and try to climb the rankings. You can also make teams invite your friends and use team utilities while showing off team nametags.
When you die a grave appears with your items for a limited time. You also get access to back so you can return after teleports and not lose everything.
The server has voting with rewards a spawn hub with custom NPCs and utilities and Discord chat linking plus anti x ray protections. The staff update it often and they listen to player feedback.

HollowSMP is a Survival plus server that feels like a chill long term world. It runs on Java 1.21.10 and it also lets Bedrock players join so more friends can play together.
The gameplay is mostly normal survival with some quality of life stuff added. The spawn area is protected and it can heal and feed you so new players are safe when they join. There is anti grief and anti cheat and good moderation tools so people can build without worrying about getting messed with.
The server has built in proximity voice chat so you can actually talk to people who are near you in game. It makes exploring and building with others feel way more like a real hangout.
The End is open now and the end cities are still fresh and not all looted so there is a lot to explore for new players.
PvP is not the main focus but there is a special dragon egg system. If you hold the dragon egg it turns PvP on for you and gives you buffs and everyone can see you. If you die the egg moves to whoever killed you. This makes natural PvP moments for people who want it but you can mostly avoid it if you just want a calm SMP.
