I found a self hosted Vanilla SMP that is all about normal survival on Java 1.21.10.
It has a world map you can use and besides that it stays completely vanilla.
They are trying to keep it as a small community and they also want operators to help it grow. It runs on an old desktop that has been up for a long time so it is meant to stay online.

Pea SMP feels like classic Minecraft survival where you just live in the world and figure things out. There are no teleports and no land claims so travel matters and builds feel more like singleplayer.
It supports crossplay for Java and Bedrock and it runs on versions 1.7x through 1.21.11. You can form teams and invite friends and staff are active in both Minecraft and Discord.
PvP is allowed but it has rules so it does not turn into griefing. New players get one day of PvP protection unless they disable it. Maces are banned and destructive PvP like crystals and TNT stuff is not allowed. Hacks exploits harassment slurs stealing and base griefing are not allowed either.
