I found a simple Bedrock server that stays fully vanilla and runs on the latest version. It is whitelist only so people have to apply first.
There are no mods and no fancy spawn. It is just normal Minecraft with other people around.
The community feels friendly and it has players of all ages. Some people team up and some just do their own thing.
They are trying to grow the player base and the Discord has over 100 members. The server usually has about 5 to 10 players online on average.

TwistedCraft is an adults only vanilla SMP that keeps Minecraft simple. It sticks to the classic survival feel with no mods and no big extras. It only uses a few small quality of life datapacks like multiplayer sleep.
The vibe is inspired by Hermitcraft where adults hang out and build together. People track builds using Dynmap and the rest is pretty open as long as you play nice with others.
Season six started on November 7th and the server is still active. Seasons run for around a year so big long projects have time and slow play is fine. Some players love early game too so resets bring that back when the map restarts.
