I found Oblivion SMP and it is starting a modded Season 2. It is a Java only server and they want to build a healthy fun community while still keeping things competitive.
You have to join their Discord and apply to get whitelisted. After you get accepted you can download their custom mod pack and the server info gets shared in Discord before launch.
They added quality of life mods plus new blocks weapons enchants bosses biomes and even a new dimension. PvP is allowed but only in designated areas and you need to read the rules in Discord to understand it.
They say the server is hosted on the West Coast of America and they plan to run events. They also try to keep it true survival with no commands for normal players except the previous champion who only gets /home.

Legends of Stonehaven is a medieval fantasy RPG server built around a big modpack vibe. It has revamped combat with animations and a dodge mechanic so fights feel more active.
You can build your character with an in depth skill tree and origins. There are custom weapons armor trinkets bosses origins and divine blessings that are balanced for this pack.
Exploring matters a lot because enemies scale up as you go further out. The overworld nether and end are overhauled and there are hundreds of new dungeons and structures plus five new dimensions to find.
