I found Specterium and it is an anarchy survival server that is trying to feel like a museum of Minecraft. It starts on Minecraft 1.0.0 and then it updates every week to the next major version until it gets to the modern era.
The big deal is you can mess with the weird stuff from each version and try to get discontinued items like alpha slabs and other old blocks. They also say they will not patch exploits or dupes until the server reaches the modern versions so each era has its own broken tricks.
The server has been around since 2019 and this is their third opening. The old world files were not shared so this is a brand new map and everyone is starting over.
It is true anarchy with one rule. Do not try to lag or crash the server on purpose. Other than that it is all on you and stealing griefing and exploits are part of the game.
