I found a chill Minecraft community called Syracuse Nation that is focused on survival but also gives you a separate creative world for big builds.
It runs on Java 1.21.11 and it has cross play so console players can join too using BedrockConnect. There is a hub that lets you get to the city the creative world and the survival world.
The server has a player economy with shops plus quests with more being added. There is also a bank to store valuables and random TPA even your mount can teleport with you. They also have proximity chat and they say the community is friendly with no pay to win.
