I found MCVerseCity and it is a semi vanilla survival place that is made for long term builds. The main survival world is permanent and is meant for a no reset goal that goes for years. It is the kind of server where you can take a long break and not come back to everything ruined.
It sticks close to vanilla. There are no custom items enchants or skills. There is still some quality of life stuff like teleport. There are also builder tools like armor stands mini blocks and decorative heads.
You can play the classic survival grind or you can trade with other players using markets. There are claims and other protection so people can collaborate without worrying as much. Chat is kept clean and swearing is not really allowed and public chat is supposed to stay on Minecraft and gaming.
There are multiple modes you can join through the lobby. Permanent survival is on 1.21.10 and hardcore vanilla is also on 1.21.10. There is a vanilla no grief option with smaller claims and 6 to 12 month worlds on 1.21.11. There are also creative plots for testing on 1.21.8.
The community is pretty mixed in age and events are player driven with admin support. The world keeps growing over time and the vibe is chill with no rush just build at your own pace.

BackToBlocks is a mostly vanilla survival SMP that tries to keep the classic Minecraft feel. It adds a few quality of life commands so getting around is not annoying like /sethome and /spawn and /tpa.
The server is about normal survival and building with other players. There is a community made spawn and the server runs events. There is also a decorated End island and a Nether hub plus a player run shopping district.
Warps can be unlocked through voting rewards so active players get more travel options without ruining survival. There is an item economy and a silly /itemflip command where you can gamble items just for fun. Phantoms can be toggled too.
They say no silly plugins and no pay to win. It is not really a PvP server but PvP and raiding are allowed with limits. Griefing is not allowed.

Bramble SMP is a brand new survival server that is mostly vanilla with a few extra features to make things smoother.
I saw waystones for faster travel and shopkeepers so players can run their own shops. PvP is on if you want fights and there are claim blocks so your builds and land can stay protected.
The server is also planning more stuff soon like custom items with special abilities plus player made towns with shared perks. There is talk about lore based progression to unlock unique gear and more quests and events as it grows.

MinedHype SMP is a friendly long term public survival server that has been run by the same owner for 7 years. It started back in 1.14 and it has had over 19,900 unique players join before.
The gameplay is mostly vanilla and it runs on Minecraft 1.21.11. There is no whitelist and there is no pay to win. There is also no economy or money plugin so trading is done with player ran shops using items.
You can protect your builds with claims and CoreProtect is used to help with protection. Grief is allowed if you did not claim the area so you need to claim your stuff.
The Overworld and Nether are meant to be long term and they will never reset. There is no set world border and players spawn randomly within the first 40k blocks. You can use /rtp to get a random spot within 50k blocks from the center spawn point then set a /home.
It supports Bedrock and Java cross play. There is a shopping district and a gaming district with teleports. There is also a web based online map plus free server events with prizes. Chat reports are disabled and rules are posted on the server site.

NerdNu is a medium sized Minecraft server that feels mostly vanilla and is all about community. It is made for players who want that old school multiplayer vibe where people actually know each other.
The PvE server is survival with no PvP so you only worry about mobs. Players team up to build towns and cities and the map reset on September 19th. They also run games nights with different player hosts and stuff like spleef and thimble and ice boat races on Fridays and Saturdays using US Eastern times.
The Creative server is open world with a mix of natural terrain and world painted areas. You can protect your builds and WorldEdit is free to use. It also has community events like Spleef and Speed Build on alternating Saturdays. Creative started Revision 38 on June 22 2024.
There was also a snapshot server but it is currently closed because of the most recent updates.

I found TerraScape and it is a peaceful survival server for Java players. The vibe is super chill and it is made for a small mature community.
PVP is only if both people agree so you are not getting jumped randomly. They also say there is no pay to win and they run events sometimes.
It is vanilla style but with a few extra plugins like sitting map art and simple voice chat that you can ignore. There is also Bluemap so you can look around.
The rules are simple. Be respectful do not grief do not steal and do not start random fights. Staff are around and they help if you have problems. It is an 18 plus community.
