I found a fresh PVE DeceasedCraft server running on version 5.10.16 and it is hosted for Aus and NZ players.
It is meant to be a chill place to play and survive without PVP fights. The post also says to add FTB Ultimine and just have fun.

I found a server called BadTiming SMP that just came back online after the owner fixed a huge lag machine that was messing everything up.
It is a SecurityCraft server on version 1.21.8 so the whole vibe is about keeping your stuff safe and playing survival with other people.
