I found a chill SMP that is newly released and it keeps things simple. It is semi vanilla so it feels like regular Minecraft and it does not shove extra stuff in your face.
The server has anti grief rules so your builds are safer. There is an economy and jobs so you can grind and trade and pick your own journey.
They also run events and build competitions. This month is film themed so people are building like it is a movie set. There is no resource pack and no clutter and no spam and the player base is active.
