I found REGNUM and it is a long term survival server on Java 1.21.11. The world is meant to stay around since it says no map resets. It has PvP and it leans semi anarchic so you can choose your own path.
The vibe is like a medieval sandbox where players make the story. People can build castles and set up lordships. There are tools for politics and war and it sounds like you can lay siege and capture enemies. Nights are harder too so it feels more dangerous.
The staff keeps rules minimal and focuses on stopping harassment and keeping things fair. Most problems are meant to get solved by players through alliances and conflict. It is whitelisted and the community is small but trying to grow.
