Lavender SMP is a Java survival server that runs on version 1.21.11 and it is set to hard mode. It is whitelist only so you join by getting approved first.
The server is 18+ and it is LGBTQ+ friendly. It feels like a close knit group that likes building and hanging out and if people are talking in voice you are expected to jump in and chat.

I found a survival SMP that is about 2 weeks old and it has a small active group with around 6 to 9 people on. It started after the old world ran for more than 3 years so everyone decided to restart fresh.
It is vanilla plus on fabric and you can still join with a normal vanilla client. The server has extra stuff that mostly helps gameplay like faster leaf decay terralith world generation dynmap claims mini blocks and heads gravestones and backups. There is also proximity voice chat but you need a mod if you want to use that.

Starfall Sanctuary is a semi vanilla server that just started Season 4 and it is looking for a few more people to join. It is a small adult group around 10 players and they have been playing together for a long time across many seasons. The vibe is chill and it is more about friends and building than trying to be a huge server.
The world is still fresh and there is a live map you can check. They picked a seed where the spawn continent has all biomes so builders have lots of choices.
It is vanilla plus with a bunch of quality of life stuff like proximity voice chat graves homes and TPA and a toggleable timber feature. There are creative helpers too like an armor stand editor mini blocks mob and player heads invisible item frames and a painting picker with the stonecutter.
