CaveMC is a semi anarchy survival server that feels like vanilla but tougher. The whole overworld is underground so there is no surface at all. It is a huge cave only world with biomes resources and structures to find.
Season 2 is live with a fresh start and more stuff to do. Survival is brutal and you need to be smart to make it.
There is also a big expansion called the Wasteland Dimension opening on November 8th. It adds new gear to fight for mega structures with secrets and a unique currency for its own economy and trading. It also brings a new spawn and a custom generated map with special features.
