I found a semi vanilla survival multiplayer server that tries to keep the normal vanilla feel but adds extra stuff to make it more fun. It supports cross play for Java and Bedrock though Java is recommended.
The community is meant to be close and friendly. They say they shut down toxicity and drama fast. You can team up on big projects like towns and shopping areas and they also run events where you can win prizes. They also support using Simple Voice Chat.
Rules are clear like no hacking no griefing no stealing and no nonconsensual PvP. The server is not pay to win and the store items can be earned in game. Ranks are earned by getting in game money and you can make money with jobs milestones tasks or running a shop.
There are extra features like McMMO skills art maps and even resizing your character. They also have a Valentines build competition where you rent a plot and build then judges pick the top 3 for prize packs.

Elysium is a small Java multi world server that just reopened with a fresh start in early November. It is looking for more players and it is mainly aimed at 18 plus. A few older community members are still around from the earlier server.
There are three main worlds. Survival is on 1.21.10 with a 10k by 10k border and mcMMO skills. It also has an online map you can open with the link from the map command. Teleport commands are mostly off so it feels more vanilla and people use Nether roof travel. There is a shopping district at spawn where players can set up chest shops and use diamonds.
Plots gives you 85 by 85 build plots so you can make your own space and not worry about other people. You start with one plot and can earn more by moving up build ranks.
Creative is a superflat freebuild world for bigger community builds. Team builds are encouraged but changing builds without permission is not allowed. There is also a Hub world for getting around plus a second Creative world that is a perk for higher build ranks.

GamerHub Towny is a very new Towny SMP that started as a streaming server and now it is trying to grow into a bigger place.
The vibe is pretty chill and griefing is not allowed and stealing is not allowed. The world never resets so builds can stay for the long run.
It has ingame ranking with ingame money and it also has dynmap. You can use player warps and player shops and there is a sell only server shop.
There are jobs and MCMMO too. The server usually has a few players and it gets the most active during Twitch streams when it can hit 8 or more online. Most players are in the Oceania region. It supports version 1.21.10 or similar.

Prosperia is an SMP that tries to feel alive with custom terrain and hand placed structures so exploring is actually fun. It is still survival at the core but it adds more stuff so you always have something to work toward.

PurpleSMP is a simple survival server that is made to feel calm but still has some nice features. It runs a recent version of Minecraft and is built for players who just want to build and relax without dealing with annoying people.

Century Caves is a chill survival server that feels really relaxed and long term. The whole server is based around mining exploring and building up a small community that likes the old school Minecraft vibe.

This is a small survival server that feels really chill. There are usually around twenty six people on every day and it is mostly about building and relaxing instead of sweaty pvp.
The main plugins are Towny Jobs and mcMMO so you always feel like you are progressing. The economy is run by the players and there is grief protection so your builds are safe. Keep inventory is turned on because the community voted for it so dying is not a huge deal.
They just added PyroFishing and everyone seems super into it. There are also two new nature style ranks in the free progression path and over one hundred plushies you can collect if you like collecting cute stuff.
The server runs on dedicated hardware now so ping is solid for people in NA and EU. It is not really a pvp server but there is a duel arena if you want to fight someone in a fair way.
The community feels laid back and friendly. Nobody is trying to act like this is some giant network. People actually talk in chat and you do not feel pressure to spend money. They might add cosmetic ranks later but nothing that gives any gameplay advantages.
