I found FellowshipSMP and it is a new community SMP that just opened last weekend. It is whitelist only and it is 18+ only so it feels more chill and mature.
It is semi vanilla with no ranks and no donor perks. There is no server shop and the economy is diamond based. There are also no teleport shortcuts so travel and bases matter more.
The server uses ValhallaMMO and ValhallaTrinkets for deeper progression. The world uses Terralith generation. Players can run shops with Shopkeepers and rent market space with AdvancedRegionMarket.
There is Bluemap so you can view the world and Bell Claims for land claiming. Phantoms are disabled. The Ender Dragon respawns weekly and it has a reworked multi phase raid boss style fight.
It runs on Java 1.21.11 and it is hosted in NA. Popular times are US time zones and the online count is around 2 to 5 right now and growing. Changes are feedback driven and polled by the community.

Puffer SMP is a Hermitcraft inspired survival server that feels super community focused. The players like to team up and make huge builds and big farms and they also plan stuff like minigames and secret bases.
There is a shopping district and a working in game economy so trading and player shops are a big deal. The server also runs a separate creative server where people can design builds together and it has World Edit and Axiom.
This is an adults only server and it has a strict application process with no exceptions. The goal is to keep out kids and griefers so the world stays chill.
They also have Bluemap for both servers and they run regular events. Staff is active and helpful and the server is up 24/7 on a dedicated machine with 64gb RAM. They also use Ledger and they have a Reddit page to post updates.GG.MINEWIND.NET New Server IP
