This server is built around a custom world that has been worked on for over ten years. It is not some quick copy paste place. It feels like someone really cared about every area.
There is a custom questing experience that is made just for this world. So you are not just grinding the same stuff you see everywhere else. You actually follow quests and explore instead of just standing in one spot.
The owner already did a beta this summer and people really liked it. Since then they kept working on it even more. It feels like a long term project instead of a throwaway server.

Minearchy is a survival server with a big focus on community and fun. It runs on Java 1.21.10 and you do not need any mods to join so it is really easy to get started.
The main world is an SMP style survival world. Your builds are protected so people cannot just grief everything and there are chest shops and a balanced economy so you can trade and make money. There are player warps and an auction system so the world feels busy and connected.
You can level up skills with an mcMMO style system and use a live Dynmap to explore the world from your browser. There are daily and weekly quests and also special events so you always have something new to do.
The server has dedicated PvP and PvE zones so you can choose if you want to fight other players or fight monsters. It is not pay to win. Everything is earned by actually playing.
There is also a big set of minigames like TNT Run Parkour Party Games Block Party KitPvP and more. So you can chill with friends or tryhard mini games when you get bored of survival.
New players and experienced players are both welcome and the server keeps updating with new content based on what players ask for.

Lodestone is a Minecraft geopol and worldbuilding server that is trying to do something new in this genre. It has custom features and the whole server is based around land power trade and politics.
The main thing that stood out to me is the Spice Trades system. You harvest spices and sell them at spawn and the environment you pick changes how good the spices are. So getting better land actually matters a lot for money and it can even start wars over the best areas.
There is Towny so players can form towns and nations. These groups can go to war with each other so it is not just building. You also get chest shops so players can make their own shops with chests and signs and trade with other players.
The server also uses Auraskills. You can level up a bunch of different skills and unlock different abilities which changes the normal gameplay loop and makes grinding feel more interesting.
Right now Lodestone is in a closed beta stage. You have to apply to be one of the first beta testers and then you can join with the IP they give you. It feels like a server for people who like serious worldbuilding politics and wars over land instead of just casual minigames.
