I found a server that kept its world after the first season ended. Season 2 starts on the same land so you spawn into places that already have stories. There are old builds left behind like towers that never got finished and mines that go way deeper than people remember and houses with sorted chests.
It is vanilla plus on Fabric and it feels hands off. There is no land claim system and no economy plugin pushing you around. You can follow old roads if you find them or just head into the dark and make your own spot. You can even finish a build that someone else started.
It uses Xaeros Minimap and it also has Dynmap so you can watch the world as it fills in. There are extra blocks for building and more detailing mods too. It also includes Friend and Foe for more mobs.
It is 18 plus and LGBTQ friendly. You apply to join first.

V Kingdoms Season 2 is a private community SMP with a pretty solid player count that can dip during EU work and school hours but gets much busier later. The discord is active and you need to get whitelisted to join.
It runs Towny style town building with protected storage using sign based chest locks. There is a grave system so when you die your items stay in a grave for about 3 hours before they are gone and other players can take them.
The server has custom weapons and artifacts plus a few guns. There is a simple economy that is still being updated. Voice chat is mandatory using Simple Voice Chat and you also need Fabric and Fabric API.
There are custom bosses where some can spawn naturally and some get summoned by admins. There is also a war mechanic in progress that works like raids where attackers try to break a beacon before time runs out and defenders can keep respawning while the beacon is active.
