Hearthspire SMP is a medieval fantasy themed Minecraft server that is all about lore exploration and community. It still lets you play how you want while the world keeps pushing you to find new stories.
It uses EliteMobs and custom enchantments so the progression feels reworked and more like an RPG. You can also pick from lots of Origins to shape your character and how you survive.
There is server wide lore to discover and follow and it keeps evolving as people play. The world has places like Dwarven mines and a floating city and each area is tied to story.
Players can build a home start a village or even create a nation. Alliances and rivalries can happen and the politics of the realm can change based on what players do.
The server is Bedrock compatible and it is opening an Open Beta on March 21st.

Waychest is a PvE semi vanilla SMP where it feels like you are starting alone but you are actually in one big shared survival world.
You begin in your own Journey with a random spawn point and you can bring friends. Each Journey has its own spawn and its own progress so it feels like a private Realm but it still connects to everyone else out there.
As you explore you start finding special Waychests and other custom stuff that points you toward places people have been. You can even craft and place your own Waychests later so future Journeys can discover your builds.
There is also a Waychest Flight minigame where you craft an Elytra then fly through rings and it leads you to a Waychest made by a stranger. Fast travel exists too but you have to discover a warp spot first to unlock it.

I found a server called Avarion and it is an RPG SMP that is built around a story driven world. It is made for mature content creators who want to stick around and make videos or stream.
The server has daily weekly and monthly quests and you can get rewards for doing them. There are RPG classes and custom weapons too.
There is a main storyline but it is not scripted so players can shape what happens. It also has balanced PvP and PvE so fighting feels fair.
