Origin SMP is a survival server that just started a new season and it runs on 1.21 for both Java and Bedrock.
It is built around a tier system and PvP progression so fights actually matter and you can work your way up over time. The world is story driven so people make alliances and enemies and the server feels like a real place.
It uses proximity voice chat so you can talk to players near you which makes trading and threats and teamwork way more intense. There are no land claims so the world is shaped by trust and politics not by plugins.
The map is finite at 2500 by 2500 blocks so you run into people a lot. It is semi anarchy so you can do a lot but random griefing with no purpose can get rolled back to protect the long term story.
