I found Spiral SMP and it is a Lifesteal SMP style server. It is not public yet but it might open on the weekend.
The server is hosted in Europe. If you want updates and more info you will need to check their Discord.

World of Eldin is a well established server with a few mods that help with protecting land and running an economy.
When you first join you can find a town to join right away or you can head out and live on your own.
A lot of towns and bases have shops that use NPCs. They buy different items from you so you can earn currency. Then you can use that money to buy stuff from other players or protect your own land.
Ranks are tied to the Lands plugin. Your rank goes up as you claim more chunks. You can join someone town or grow your own. You can also make alliances and even build a nation made of towns.
The world has a big road system that players build together. It makes travel easier between settlements and horses are a popular way to get around. The current map started in November of 25 so there is still a lot left to explore.
There is a command for the server discord invite and another command that opens the web map.

MistyMC is a long term 100 percent vanilla SMP that has been running for around 8 months and it is meant to stick around with no resets.
Players can join on Java and Bedrock on the most recent versions so it is easy to bring friends from either side.
The community is a big tight Discord group and the vibe is to make friends and chill or jump into a new Minecraft phase and form a nation.
There is also a live map you can use to check out the world while people play.

Elengubu is a Vanilla SMP that is built around friendship creativity and faith. The vibe is positive and respectful and it is meant to feel welcoming.
The server has players from lots of countries and time zones so someone is usually around. It is based in Europe and runs on 7GB so it rarely has lag.
The world is over a year old so there are many cool builds and a lot of history to explore. It still feels like a tight knit community.
It is a Christian server but it is open to anyone who wants to play casually whether you hop on once a week or grind every day.

I found a survival SMP called Overstressed and it has a big Create vibe. The server just launched and the world is already active with people building.
There are over 250 custom quests so you can follow a huge progression path instead of feeling lost. The economy is player driven and you can set up shops and trade using a custom currency system.
The spawn is staff built and it looks like a real town. They also have the Via Romana network so you can travel around on a big road system. You can head to the town center or go into the deep forest and start your own place.
They really push the horse start too so you can grab a horse early and get moving. The staff team is active and they are ready to welcome new players.

I found a public SMP for Java 1.21.
It is a simple survival multiplayer server that is open for anyone to join and play.

I found Black Banner and it is a strict 1.21+ anarchy server that is built to last.
There are no wipes and no seasons and no soft resets. The world is meant to keep going for as long as Minecraft exists so everything that happens stays.
There are no gameplay rules and no protections and staff will not step into player fights. Griefing raiding theft traps and KOS are part of how it works and it is also not pay to win.
The only real rules are no IRL doxxing and do not try to lag or crash the server. It is made for uptime not for fairness.
It supports Java and Bedrock Edition and it runs on stability focused stuff with a conservative update policy.

SableCraft is a small vanilla SMP that is meant to last for a long time. It is not trying to be a huge public server that wipes the world all the time.
The whole point is a chill community with respectful players. Builders casual players and creators can all fit in here.
It is also trying to stay clean with no pay to win stuff no anarchy and no drama. The direction is community driven from day 1 and they are opening up for season 1 player applications plus optional staff applications.

Vinterra is a Hermit style survival server where people want to play for the long term and build huge bases.
The community is active with around 20 to 30 players and there is usually someone on. They also do events a lot and sometimes even game nights together.
Right now they are looking for about 10 new players. They do simple interviews on Saturday all day so they can meet you before you join.

GamerHub Towny is a small friendly Towny SMP server that is made to feel chill and safe. The rules are simple and it is no griefing no stealing and no resets ever so your stuff can stay for the long run.
It has a relaxed vibe but it can still feel casually competitive. The community is welcoming and you can find people playing in AU EU and US timezones. At busy times it can hit over 20 players so it usually feels alive.
You can build and claim land with Towny then grow your town over time. There are Jobs plus MCMMO and in game ranking to keep you busy. There is also Dynmap so you can see what is going on around the world.
Players can set up warps and run their own shops. There is also a server shop that is sell only. The server runs on 1.21.x and it supports Bedrock too.
