This is a small chill Java SMP where people just build and hang out. It is survival and it sticks close to vanilla with only a little QoL.
The world is still pretty fresh so there is lots to explore and lots of space to build. The terrain is custom and made for tall mountains so big scenic builds fit right in.
The rules are simple. No griefing and no stealing. PvP is only if both people agree. The world is meant to be long term with no planned resets and the End may get reset to help new players get geared.
It is aimed at players 17+ who want to stay for a while and like building. Version is Minecraft Java 1.21.11 and cracked is not allowed.

I found TheNationsSMP and it is a long term survival server that cares a lot about fairness. It says there is no pay to win at all and they want the world to stay stable with a real community.
The main idea is nation building where players can make their own custom nation and lead it. There is also combat themed around history with weapons from the 16th to 18th centuries.
It supports Java and Bedrock cross play so more friends can join together. It also has a brewing system with alcohol mechanics and it uses Valkyrien Skies for physics based machinery with plugins.

LegacyMC is a vanilla anarchy survival server where you get dropped into a huge open world and everything is allowed. There are no rules and no gameplay changing plugins so it feels raw and simple like old school Minecraft.
I noticed it has no land claims and no teleporting so you actually have to travel and protect your own stuff. PvP is on and griefing and raiding can happen anytime so you never really feel safe.

This server feels like a real world that just keeps going. There are no resets and it is all player built and player ran. The admins do not step in and you are supposed to handle things with the mechanics and your group.
You can reinforce your builds with Citadel so bases can be really hard to raid. Farming and mining are different too since some crops and ores only work in certain biomes. Crops can keep growing while you are offline and you can boost grow time with fertilizer.
Ores show up as you mine and better pickaxes help your rates. Different biomes and Y levels change what you find. Some resources are stuck to certain regions so players actually have to travel and trade.
There are snitches that alert you when someone enters your area. If someone keeps griefing there is a justice system with ExilePearls that can banish them to the End dimension. The vibe is a mix of towny and factions and worldbuilding and roleplaying with total player freedom.
