I found a small laid back Minecraft server run by a few friends who want more people to play with them.
It is modded and the mod list is curated so it adds lots of stuff like new monsters and weapons and armor plus mounts and resources and furniture and cosmetics.
Even with the mods it is built to run well. It uses Fabric and it is meant to be easier on lower spec PCs.
The main vibe is exploring and building and discovering things together. It is not competitive and it is not for people who only want to play solo.
People talk in Discord and the server also uses proximity voice chat so you can run into someone and just talk while you explore or build or team up.
