I found this survival server that keeps a vanilla vibe but still adds extra stuff that makes it feel fresh. It is built for PvP and the whole point is that there are no land claims so you can build anywhere and people can raid anywhere too.
It supports both Java and Bedrock so more people can hop on. There are player shops plus an auction house and duels if you want a fast way to make money.
It has custom enchants that try to stay balanced like 3×3 drill style mining and lifesteal. The world also has custom terrain that still looks like it belongs in Minecraft.
The server is made to run well even on low end PCs. PvE gets harder the farther out you go and there are random world events every 30 minutes that can help or mess with you.
The owner says they are still working on it and changing things based on what players want. They also want feedback and people to help out.

There is proximity voice chat so people can talk when they are close to each other. This makes trading and teaming up feel way more real. You do not claim land so you have to rely on trust and the stories you build with other players.
The server allows anarchy style play but not just mindless griefing. If someone destroys stuff for no reason and there is no story behind it the staff roll it back. So you still get danger and betrayal but it feels like it all has a purpose.
