This is a new survival world that is made for people who just want to chill and build cool stuff. It is mostly vanilla but it has a few simple commands like sethome and tpa so it is easier to live and travel.
There is no whitelist so anyone can hop on. The owner added CoreProtect so if someone tries to grief it can be rolled back and fixed. That makes it feel pretty safe to build big projects.

I found this server called PurpleSMP and it feels super chill. It is a PvE world so you can just relax and not worry about getting hunted all the time. The idea is to hop on build something cool and hang out with the community.
The server uses an in depth skill system with McMMO so as you play your skills level up and it makes normal Minecraft stuff feel more fun. They also use GriefPrevention so you can claim your land and protect your builds from getting wrecked.
There is a Brewery plugin where you can brew distill and age different drinks. It sounds like there are a bunch of recipes to figure out so that gives you something to mess with when you are bored.
You get access to vaults so you do not have to carry everything on you after a big mining trip. That makes storing your loot a lot easier. The server also has crossplay so you can join from different devices like console or phone.
To play you have to be in their discord so the community stays connected and people can talk and meet each other. Overall it feels like a relaxed SMP where you just build up your place and enjoy a peaceful world with other players.
