I found a normal SMP that is starting up soon and it is meant to feel like regular Minecraft survival.
There is no economy stuff and it is not modded. They only use a few plugins and it sounds like they are kept light so the gameplay stays mostly the same.
It has crossplay and the server is up 24 7. They also say there will be no resets so you can build long term. Launch is on Feb 20.

Sleeping is handled by a rule where only about a quarter of the players online need to sleep to skip the night. You play normal Minecraft but there is a lifesteal system. When you kill other players you gain hearts and when you die you lose hearts. If you lose all your hearts you actually get banned so every fight matters a lot. New players get a one hour grace period so they do not lose hearts right away.
There are a few small plugins that make life easier. You can set a home with a command and teleport back to it. You can also send teleport requests to other players to meet up. There is a vote shop where you spend vote tokens on things like custom name colors and a custom MOTD.
Combat is very serious here. There is a plugin that locks commands during pvp and it punishes people who try to combat log. If you log out while tagged you get replaced by an npc that can be killed and it drops all your stuff. There is also a plugin that stops crazy movement hacks and one that cuts down really bad chat spam.
The server tracks stats like playtime kills and deaths and you get rewards when you hit milestones. Players can also vote to skip the night by using a simple command.
