I found Crown SMP and it is a new Java 1.21.8+ server that is looking for players and staff.
The big thing here is player choice PvP. You can toggle PvP in the survival world so you can build and chill. There is also a dedicated PvP world where combat is forced so you can go fight when you want that risk vs reward feeling.
Survival uses land claims so your builds stay protected. If land is unclaimed it is fair game so claiming matters and it feels like smart survival rules.
There is a massive quest system with over 10000 quests. It is gameplay driven so you can explore grind and finish objectives at your own pace.
You can also use jobs to earn money from mining farming building and more. It has leveling prestiges and long term progression for casuals and grinders.
The economy is balanced with player run chest shops and trading. There are also server shops that are tuned to not ruin everything.
Extra stuff includes a mob arena with scalable rewards custom enchants and redstone powered flight that uses fuel. There are cosmetic focused rewards too. The server has a survival world and a PvP arena world.
