AvalonEarth is an Earth SMP style server with geopol vibes where players make nations and deal with diplomacy and fights. It supports Java and Bedrock so more people can play together.
The world is an Earth map at 1 to 500 scale so there is a ton of space to claim land and build. It uses Towny for towns and nations.
It feels welcoming because you get starter money and anyone can start a nation right away. There are wars and conflict if you want that but you can also stay peaceful and mostly avoid it.
Money comes from things like jobs plus farming and fishing and they said more ways are coming. The server has seasons and season two is already out with lots of new players joining.

It is semi anarchy so fights and betrayal can happen but it is not just pointless destruction. If someone griefs with no story or reason it can get rolled back so the world can keep going
The main thing here is the Tier system for PvP. You can gain Tiers by killing players and you lose Tiers when you die so every fight feels risky
There is proximity voice chat so people can talk during trades and deals and threats. There are no land claims so the world is shaped by trust and politics instead of plugins
The map is finite at 2500 by 2500 blocks so players run into each other a lot and stories actually form

I found a server called HermitLike that is starting Season Two and it feels like a HermitCraft inspired SMP. It is only about two weeks old so it is still early game and a lot of people are already active.
It runs on 1.21.11 and it supports crossplay so Java and Bedrock players can be in the same world. That means PC and consoles can play together.
The server stays mainly vanilla with just a few quality of life and moderation plugins. There are no teleports and no warps and no towny style stuff and no land claiming.
They say it is no pay to win with no voting and no crates. The rules are peaceful with no PvP and no stealing and no griefing so your builds and items are meant to stay safe.
There is a starting village at spawn that you can join and later there will be a communal shopping district. They also have an online live map and a staff team watching for trouble and helping people settle in. They also do events and the discord is active.
