PurpleSMP is a small survival server that feels simple but still polished. It is mainly PVE and it is meant to be a relaxing place to build without dealing with rude players.
It runs on 1.21.11 and it supports crossplay so you can join from different devices. The world has lots of space with no world border so you can travel far and find fresh land.
The server uses mcMMO so leveling skills makes grinding feel way better. The economy is player made with no server shops and no currency so trading is up to the community.
Build safety is taken seriously. Blocks are logged and staff can check what happened. Your inventory is backed up when you join and leave and when you die so lost items can be restored if rules get broken.
There is land claiming to protect your builds plus PlayerVaults for extra storage. PvP is off by default but you can toggle it if you want to fight your friends. There is also a live map you can use to look around the world.

Gallant is a semi vanilla survival server that tries to keep the normal Minecraft feel while adding a few small quality of life tweaks.
There is no whitelist application. You join their Discord. You link your user. Then you can jump in and play.
They focus a lot on keeping your stuff safe with backups. They also have grief protection and inventory snapshots.
You can protect chests with a sign. You can vein mine ores by sneaking. Creepers do not damage blocks and phantoms do not spawn. Minecarts go faster. The server can pick the best tool for the job and it can auto refill your hand while building.
