I found a server called Peaceful Craft and it is made to be chill and easy to join. You do not need any mods to get in so it feels simple.
The server has keep inventory on so dying is not a big deal. PvP is turned off so players are not fighting all the time.
It also has a claim system so you can protect your builds. The server opens at 7:00 pm on Thursday the 19th est time and it says it has lots of unique features.
