I found a very early alpha server that is going for late medieval faction warfare with RPG style progression and a player run economy.
You can pick how you want to play. You can go all in on PvP wars. You can grind like an MMO. Or you can stay more independent and be a trader gatherer craftsman or contractor who supplies factions and builds for other players.
There is custom content like crops furniture and custom weapons and armor with unique effects. The economy uses mixed currency and the main market hub is called Osthaven where you spawn and trade.
Out in the wilderness players can set up temporary camps that are protected. Mobs are stronger than vanilla and there are boss mobs that are meant for party play. Trading is also safer because it uses a secure MMO style trade window system.

Eden is a Minecraft server that is trying something different. The world is meant to be permanent and it does not wipe when people get bored. Your builds are supposed to last and the server has tools and special mechanics to help protect your land.

I found a modded SMP called Jujutsu Origins Reborn and the big hook is the Jujutsu Craft mod by Orca. It is a standard survival world but it has a deep power system and a lot to learn.
You use cursed energy and a cursed technique to get stronger. Progression is based on grades and you go from Grade 4 up to Special Grade. If you push far enough you can reach things like domain expansion.
This server is not super casual if you want to climb fast since it takes skill prep and grinding. It can still be chill if you just want to roleplay a character and hang out. They also talk about adding lore later.
To start you join their Discord then you make a spin ticket so your technique can be rolled. If you do not like it there are events and trading so you can try to get something else. You also pick sorcerer or curse and that mainly matters for team events. Then you download the modpack add the IP and jump in with rtp if you want.
