I found a small Java semi vanilla server that just released after about 4 months of work. It is built around realism so you have to earn your progress and it is not just free stuff.
It has a completely custom map plus custom ore generation. It also has custom combat and a climate system and more.
Auto farms are disabled so you cannot just automate everything. There is also a 125 dollar contest running for redesigning the servers logo and banner and you enter by submitting your own image.

The server started in August 2024 and it is meant to be long term. Player progress does not get reset. Sometimes empty unclaimed land gets refreshed to keep the world looking nice but builds and claimed areas are meant to stay. It feels like a big worldbuilding and roleplay project that will last for years.
There are lots of magic mods so you can study spells and arcane stuff. There are also combat and warfare mods so fights feel more intense. The world generation is upgraded so exploring feels new and the wilderness looks really good. There are mods for farming food and other hobbies too so you can focus on what you enjoy.

The terrain is upgraded with new world generation so wilderness feels fresh and pretty. There are extra structures and loot systems and also more mobs and survival overhauls so the game is more intense.
